Sweet Potatoes Casserole

5 large sweet potatoesWashed, peeled and sliced (about 4 pounds)
½ cup packed brown sugar 
3 tablespoons orange juice 
1 pinch ground cinnamon

1Preheat oven to 350 degrees. 
2Place sweet potatoes in a large saucepan with enough water to cover. 
3Bring to a boil and cook until tender, about 15 minutes. 
4Remove from heat and drain. 
5Whip sweet potatoes in a large bowl with electric mixer. 
6Add the brown sugar, orange juice and cinnamon. 
7Pour into baking dish. 
8Bake uncovered for 25 to 30 minutes.Internal temperature 135 F.
