Swiss Chard Sauté

Portion Size: ½ cup kale 

Ingredients: Yields: 8 servings

Ingredients Notes: 
1½ pounds Swiss Chard, Washed, remove hard stems and leaves chopped
1 tablespoon olive oil
3 cloves garlicWashed, peeled and minced
½ cup low sodium vegetable stock or water
salt and pepper
2 tablespoons red wine vinegar

1Heat olive oil in a large skillet over medium high heat.
2Add the garlic and cook until soft.
3Raise heat to high add the stock or water and kale.
4Toss to combine.
5Cover and cook for 5 minutes.
6Remove cover and continue to cook, stirring until all the liquid has evaporated.Cook until internal temperature reaches 135°F.
7Season with salt and pepper. Add the vinegar.

Variation: Swiss Chard can be steamed, braised, microwaved, roasted, stir fry. May add choice of herbs or spices for flavor.
