Taco Supreme
Portion Size: 1 Taco: ½ cup beef/potatoes mixture; 2 tablespoons cheese, tomato and lettuce

1 large onion, grated | Washed, peeled and grated |
2 pounds lean ground beef | |
1 tablespoon chili powder | |
Salt and Pepper to taste | |
1/2 cup salad oil | |
8 corn tortillas | |
1 pound Low fat cheddar cheese | shredded |
1 large tomato, chopped | Washed, trimmed and chopped |
1 Head lettuce, shredded | Washed, trimmed and shredded |

1 | Combine potatoes and onion in a large bowl. | |
2 | Add ground beef, chili powder, salt and pepper. Mix well. | |
3 | Heat 1/4 cup oil in a skillet, add meat mixture and cook over medium low heat, stirring frequently, until meat is browned and potatoes are tender. Drain off fat. | Cook until internal temperature reaches 165 F degrees for 15 seconds |
4 | Spread filling almost to edges of a tortilla. | |
5 | Fold tortilla in half forming a half circle. | |
6 | Heat remaining 1/4 cup oil in a skillet. | |
7 | With a spatula, place filled tortilla in hot oil; fry both sides until crisp. | |
8 | Repeat until all tortillas are fried. | |
9 | Open tacos slightly and stuff with cheese, tomatoes and lettuce. |
