Taco Supreme

Portion Size: 1 Taco: ½ cup beef/potatoes mixture; 2 tablespoons cheese, tomato and lettuce

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 large potatoes, Washed, peeled and grated 
1 large onion, gratedWashed, peeled and grated
2 pounds lean ground beef 
1 tablespoon chili powder
Salt and  Pepper to taste
1/2 cup salad oil 
8 corn tortillas 
1 pound Low fat cheddar cheeseshredded
1 large tomato, chopped Washed, trimmed and chopped
1 Head lettuce, shredded Washed, trimmed and shredded
For gluten free (GF): Use GF tortillas. Always check each ingredient to be sure it is gluten free.

1Combine potatoes and onion in a large bowl. 
2Add ground beef, chili powder, salt and pepper. Mix well.
3Heat 1/4 cup oil in a skillet, add meat mixture and cook over medium low heat, stirring frequently, until meat is browned and potatoes are tender. Drain off fat.Cook until internal temperature reaches 165 F degrees for 15 seconds
4Spread filling almost to edges of a tortilla.
5Fold tortilla in half forming a half circle.
6Heat remaining 1/4 cup oil in a skillet.
7With a spatula, place filled tortilla in hot oil; fry both sides until crisp.
8Repeat until all tortillas are fried.
9Open tacos slightly and stuff with cheese, tomatoes and lettuce.
