Turkey Salad with Dried Cranberries

Portion Size: 1/3 cup turkey salad on 1 roll. 

Ingredients: Yields: 8 servings

Ingredients Notes: 
3 cups diced pieces roast cooked turkey
1/2 cup diced celeryWashed, trimmed and minced
1/2 cup dried cranberries
1/2 cups sliced unsalted almonds
1 tablespoon grated onion Washed, peeled and grated
1 cup light mayonnaise
8 Romaine Lettuce leavesWashed
8 Sandwich RollsMay use whole wheat


Steps:Directions: Critical Control Point /Quality Assurance
1Mix the turkey, celery, cranberries, almonds, and mayonnaise in a bowl.  Chill.    
2Slice Rolls.
3Add 1/2 c. turkey salad and a lettuce leave to each roll.
