Zucchini and Goat Cheese Appetizers

| 1/2 cup finely chopped sun dried tomatoes | |
| 1/2 cup finely chopped fresh spinach | Washed, trimmed and chopped |
| 8 basil leaves, chopped | Washed, trimmed and chopped |
| 1 garlic clove, minced | Washed, peeled and minced |
| Salt and pepper | |
| 2 long zucchini, sliced into coins | Washed, trimmed and sliced |
| ¼ cup shredded radishes | Washed, trimmed and shredded. |
