Chicken and Pasta with Lemon Dressing (meatless)

| 16 oz. package of dried rotini pasta | May use whole grain . For vegan: use vegan pasta |
| 1/3 cup fresh lemon juice | |
| 1 teaspoon dried basil | |
| 1 tablespoon Dijon mustard | |
| 2 Tablespoons olive oil | |
| 1 teaspoon honey | |
| 4 cups meatless cooked chicken or turkey pieces | Cook until internal temperature reaches 145°F. |
| 1/2 teaspoon salt | |
| 1/2 teaspoon garlic powder | |
| 1/4 teaspoon black pepper | |
| ¼ cup feta cheese | For vegan: use vegan feta |

| 1 | Cook pasta according to package directions. Drain pasta. | |
| 2 | For Dressing in a small bowl whisk together lemon juice, basil, oil, honey, salt, garlic powder, Dijon mustard and black pepper. | |
| 3 | In a large bowl combine pasta, and chicken. | |
| 4 | Add Dressing. Toss gently to coat. | |
| 5 | Chill until ready to serve. | |
| 6 | Top with feta cheese just before serving. |
