Chicken and Pasta with Sun Dried Tomatoes (meatless)

Ingredients Notes: 
2  1/2 lb.  meatless chicken , pieces
1 lb. package pastaFor vegan: use vegan pasta
1/2 cup sun dried tomatoes, chopped
4 cups fresh baby spinachWash and trim
1/2 cup Parmesan CheeseFor vegan: use vegan Parmesan cheese

1Prepare pasta according to package directions; drain and set aside.
2Sauté chicken in oil in a large skillet over medium-high heat for about 15 minutes, turning occasionally until heated through.Cook until internal temperature reaches 145 degrees F.
3Add sun dried tomatoes and spinach. Stir gently until spinach wilts.  Remove from heat, stir in Parmesan cheese.
4Add pasta to sauce and toss.
