Chicken Breast with Honey Mustard Sauce (meatless)

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 ½ meatless chicken breasts
1 teaspoon salt
½ teaspoon black pepper
Sauce:
2/3 cup light mayonnaise For vegan: use vegan mayonnaise
2 tablespoons Dijon mustard 
2 tablespoons prepared yellow mustard 
2 teaspoons lemon juice 
2 tablespoons honey

1Season chicken with salt and pepper.
2Heat chicken in a large pan. 
3Cook until lightly brown and turn.  Cook for 3-5 minutes on each side. Cook until internal temperature reaches 165°F. 
4. Combine ingredients for sauce. Blend until smooth. Serve sauce on side for dipping.
