Cranberry Turkey Burgers

2 cloves garlic | Washed, peeled and minced |

1 cup panko breadcrumbs | |
¼ cup light mayonnaise | |
8 buns | |
1/2 cup mayonnaise | |
3 tablespoons pesto | |
8 lettuce leaves | |
8 slices tomato | |
8 slices Swiss cheese |

1 | In a bowl cover cranberry with boiling water. Let sit for 5 minutes while the reconstitute. Once plump, drain and chop. In a small bowl combine ½ cup mayonnaise with pesto sauce and chill until ready to use. | |
2 | In a large bowl add ground turkey, garlic, salt, pepper, breadcrumbs and1/4 cup mayonnaise. Mix together. From into 8 patties. | |
3 | In a large skillet over medium high heat add oil. Add the burgers and cook on both sides until the patties are golden and meat is cooked to proper temperature. About 10 minutes. | Turkey needs to reach 165 degrees. |
4 | Add patty to bun. Top with cheese, lettuce, tomato and sauce. |
