Italian Chicken (meatless)

Portion Size: 4 oz. chicken and cheese,  2 T.  sauce

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 lbs. meatless chicken 
1/2 teaspoon oil
1 tablespoon Italian seasoning
1 large jar of thick meatless spaghetti sauceFor vegan: use vegan sauce. 
8 slices low fat mozzarella cheeseFor vegan: use vegan Mozzaralla cheese

1Heat oil in a skillet and brown the chicken on both sides.
2Pour the spaghetti sauce over the chicken and add Italian seasoning.  Reduce the heat to low and simmer for 20 minutes. Cook until internal temperature reaches 165°F. 
3Just before serving, put a slice of mozzarella cheese on each piece of chicken.  Allow it to melt.  Spoon sauce on top of cheese.
