Italian Sausage with Sweet Peppers and Pasta

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 pounds mild Italian Sausage (turkey)Use bulk for texture modified diets. No links
1 pound bow tie pastaMay use whole grain
3 medium red sweet pepperCut into 3/4 inch pieces
1 cup vegetable or beef broth
1/2 teaspoon black pepper
2 tablespoons parsley
Grated Parmesan cheese

1Prepare pasta according to directions on the package.
2Cut sausage into 1 inch pieces.
3In a large skillet cook sausage and sweet peppers over medium-high heat until sausage is brown.Cook until internal temperature reaches 165 F. 
4Drain well.
5Stir in the broth and black pepper into skillet.
6Bring to boiling; reduce heat.
7Simmer uncovered for 5 minutes.
8Sprinkle with Parmesan cheese.
