Italian Sausage Soup with Tortellini

Portion Size: 2 cups 

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 pounds lean sweet Italian sausage (turkey)Use bulk or links. 
1 medium onionWashed, peeled and chopped fine
1 teaspoon garlic powder
2 tablespoon all purpose flour
5 cups beef broth
1 cup water
1 large can (16 oz.) chopped tomatoes
1 cup sliced thin carrotsWashed, peeled and sliced
1 teaspoon basil
1/2 teaspoon oregano
1 (8 oz.) can tomato sauce
1 1/2 cup sliced zucchiniWashed, trimmed and sliced.
8 ounces tortellini pasta
2 tablespoons parsley flakes
1 bag fresh baby spinachWashed and trimmed
1/4 cup Parmesan cheese

1In a large stock pot add sausage and brown.
2Remove sausage and drain, reserving 1 tablespoon of the drippings. 
3Slice sausage.
4Saute onion and garlic in the drippings. Add flour.
5Stir in beef broth, water, tomatoes, carrots, basil, oregano, tomato sauce, and sausage.
6Bring to a boil.
7Reduce heat; simmer uncovered for 30 minutes.
8Stir in zucchini and parsley.
9Simmer covered for 30 minutes.
10Add tortellini and simmer for 10 minutes.
11Add spinach and cook for 3 minutes with lid off.
12Top with Parmesan cheese.
To make this recipe gluten free: Use GF broth, GF Italian Sausage, GF pasta/tortellini and GF flour. Always check all ingredients to be sure they are gluten free.
