Mediterranean Salmon Orzo Salad

Portion Size: 2 cups (1 cup salmon/ orzo and 1 cup spinach)

4 cups water packed salmon, drained and flaked
8 cups baby fresh spinach, washedWash and trim
1 red bell pepper, finely choppedWash, trim and finely chop
2 medium tomatoes, dicedWash, trim, and dice
4 green onions with tops, choppedWash, trim and chop
1 lb. package orzoMay use whole grain pasta
1 can (15 oz.) garbanzo beans, rinsed and drainedLow-Sodium Canned Garbanzo beans 
1/4 Cup olive oil
½ cup Red Wine vinegar
2 tablespoons dried parsleyOr ¼ cup fresh parsley finely chopped
2 clove garlic, minced
2 tablespoons Dijon mustard
1/2 teaspoon salt 
1/4 teaspoon pepper
4 oz. low fat feta cheese

1Prepare Orzo according to the directions on the package; Drain
2In a small bowl whisk together, olive oil, red wine vinegar, parmesan, parsley, garlic, Dijon mustard, salt and pepper.
3In a large bowl, add orzo, salmon flakes, bell pepper, green onion, tomato and garbanzo beans.
4Drizzle with dressing and gently toss to coat.
5On serving plate add baby spinach and top with salmon mixture. Top with feta cheese. Serve cold.
