Quesadilla Pizza

Portion Size: 1 pizza

Ingredients: Yields: 8 servings

Ingredients Notes: 
16 fajita (6 inch) flour tortillas (no lard variety) 
1 pound shredded low fat cheddar cheeseFor vegan: use vegan cheddar cheese 
2 Tablespoons vegetable oil
1 cup pizza sauceFor vegan: ensure vegan sauce 
1 teaspoon ground cumin
1 can fat free refried beans, vegetarian
¼ cup diced green chiliesWashed and diced
4 green onionsWashed, trimmed, and chopped
½ cup shredded low fat Monterey Jack cheeseFor vegan: use vegan cheese
½ cup sliced ripe olives

1Preheat oven to 450 degrees.  
2Place 8 tortillas on baking sheet.
3Sprinkle with cheddar cheese evenly over tortillas; top with remaining tortillas. Brush lightly with oil. Bake for 4 minutes.  
4Combine pizza sauce and cumin in a small bowl.  Spread on tortillas.
5Spoon beans evenly over sauce mixture; sprinkle with chilies, green onions, Monterey Jack cheese and olives.  
6Bake for 3 minutes, or until cheese is melted.  Cut into wedges.
