Turkey and White Bean Soup or Chicken and White Bean Soup
Portion Size: 1 ½ cup
Ingredients: Yields: 8 servings

| 2 T. oil | |
| 1 onion | Washed, peeled and diced |
| 1 Tablespoon flour | |
| 1 Tablespoon dried basil | |
| 1 t. garlic powder | |
| ½ t. ground oregano | |
| 2 lbs. lean ground turkey ( or chicken) | |
| 1 (14.5 ounce) can diced tomatoes | Use no added salt variety |
| 6 cups low sodium chicken broth | |
| 2 (15oz). can white beans | Not drained. |
| 1 (14 oz.) package fresh spinach | Washed, trimmed and chopped. |
Directions:
| Steps: | ||
| 1 | In large stockpot, brown ground turkey and onions in oil. | |
| 2 | Drain. | |
| 3 | Add flour, basil, garlic powder and oregano. Stir. | |
| 4 | Add tomatoes, chicken broth and beans. Bring to a boil. | |
| 5 | Reduce heat. Stir in spinach and simmer 5 minutes uncovered. Serve hot. | Serves 8. |
To make this recipe gluten free: Use GF broth and GF flour. Always check all ingredients to be sure they are gluten free.
