Turkey Sausage and Pasta with Sun Dried Tomatoes

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 (1pound) low fat turkey sausage (kielbasa)Cut into 1/2 inch slices
1 pound package pastaMay use whole grain
1/2 cup sun dried tomatoes or 1 c. fresh tomatoesWashed, trimmed and chopped
4 cups baby spinachWashed, trimmed and chopped
1/2 cup Parmesan cheese

1Prepare pasta according to package directions; drain and set aside.
2Sauté Turkey sausage in oil in a large skillet over medium-high heat for 15 minutes, turning occasionally until lightly browned and temperature reaches 165 degrees F.
3Add sun dried tomatoes and spinach. 
4Stir gently until spinach wilts.
5Remove from heat, stir in Parmesan cheese.
6Add pasta to sauce and toss.
