Turkey Sausage and Pasta with Alfredo Sauce

| 1 package (16 oz.) low fat turkey sausage | Cut into 1/2 inch slices. Use bulk sausage without skin for texture modified diets. |
| 1 pound package penne pasta | May use whole grain. |
| 1 (14 oz.) fat free evaporated milk | |
| 2 cloves garlic | Washed, peeled and minced |
| 1 cup nonfat milk | |
| 1 (8 oz.) light cream cheese | Cut into small cubes |
| 1/2 cup Parmesan cheese | |
| 1 cup frozen peas |

| 1 | Prepare pasta according to package directions; drain and set aside. | |
| 2 | Sauté sausage in a large skillet over medium-high heat for 5 minutes, turning occasionally until lightly browned. | Cook until internal temperature reaches 165 F. |
| 3 | Add milk, evaporated milk, garlic, cream cheese and stir. | |
| 4 | Bring to a boil over medium-high heat. Reduce heat. | |
| 5 | Add peas, simmer gently for 3-4 minutes or until mixture begins to thicken. | |
| 6 | Remove from heat, stir in Parmesan cheese. | |
| 7 | Add pasta to sauce and toss. |
