Cajun Creamy Chicken

Portion Size: 4 oz. 1/2 cup

Ingredients Notes: 
2 lbs. boneless skinless chicken breasts or thighs2 lbs. edible portion 2 ½ -3 lbs. as purchased
1 teaspoon saltTo taste.
1/4 teaspoon black pepper.To taste.
1 Tablespoon oilAs needed.
2 tablespoons lower sodium Cajun seasoning
1 cup low sodium chicken brothOr 1 t. low sodium granules and 1 cup water
½ cup diced tomatoesWashed, trimmed and diced. Optional
1 8 oz. light cream cheese

1Season chicken with salt and pepper. In a large pan heat oil to medium high heat. Add chicken. Brown chicken in oil.Temperature check.
Minimum Temperature 165°F for 15 seconds
2Stir in Cajun seasoning, chicken broth, tomatoes, and cream cheese. Simmer 15 minutes. Stirring frequently.  Done when heated through and cheese is melted.
