Italian Sausage White Bean Soup

Portion Size: 1 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 pounds lean sweet Italian sausage (turkey)Use bulk
3 tablespoons all-purpose flour
6 cups low sodium chicken broth Or 6 t. low sodium chicken granules and 6 cups water.
2 can (15 oz.) white beans drained
1 lb. chopped baby spinach or kale
1 teaspoon Italian seasoning
14 oz. can nonfat evaporated milk

1In a stock pot, brown Italian sausage.  Drain fat. Sprinkle in flour. Toss to coat.
2Add broth, beans, Italian seasoning and milk. Bring to a boil. Lower to simmer. Simmer for 20-30 minutes.Cook until internal temperature reaches 165 F.
