Black Bean Broccoli and Rice Bowl
Portion Size: ½ cup rice, ½ cup beans plus toppings
Ingredients: Yields: 8 servings

| 3 (15 oz.) cans no added salt pintos beans | Drained and rinsed. |
| 2 cups brown rice | |
| 4 cups broccoli | Washed, trimmed and chopped |
| 2 tablespoons lower sodium taco seasoning mix | |
| 1 cup Pico de Gallo, mild | Optional |

| 1 | In a pot add rice and 5 cups of water. Cover. Bring to a boil. Reduce heat to low. Simmer 40-45 or until rice is tender. Stir in taco seasoning. | |
| 2 | Steam broccoli in microwave. Heat beans in microwave. | 4-7 minutes in a microwave safe dish. |
| 3 | In a serving bowl, add a layer of rice, followed by beans and corn. Top with broccoli and sauce. |
