Pork Chops With Creamy Dijon Sauce

| 3 lbs. boneless pork chops, (8 chops) | Trim all visible fat |
| 1 teaspoon salt | To taste |
| ½ teaspoon black pepper | To taste |
| 3 Tablespoons olive oil | As needed. |
| 1 cup light sour cream | |
| ¼ cup Dijon mustard | |
| 1 teaspoon low sodium chicken granules | |
| 1 cup water |

| 1 | Season chops with salt and pepper. | |
| 2 | Heat 3 Tbsp. oil in large skillet over medium high heat. Brown chops, 7-8 minutes per side. | Cook until internal temperature reaches 145° F for 15 seconds. |
| 3 | In a bowl combine sour cream, granules, water and mustard. Stir to make a slurry. Stir in sauce. Pour over pork chops. Simmer until thick and bubbly. |
