Sweet Potato Crostini

1 large sweet potato 
1/2 cup hummus 
1 multigrain baguette, thinly sliced on the diagonal and toasted 
1/4 cup dried cranberries 
For gluten free (GF); Use a GF baguette. Always check each ingredient to be sure it is gluten free.

1Wash sweet potato and pierce with fork 2-3 times. Heat in microwave on high for 5 minutes or until tender
2Remove peel from sweet potato. Place in food processor and blend until smooth. 
3Add hummus and pulse until combined. 
4Spread onto toasted bread and sprinkle with cranberries.
