Beef Tostada
Portion Size: 1/3 c. ground meat, 1/4 c. refried beans, 1 tortilla, ¼ cup tomatoes and, ½ cup lettuce each.

1 pounds lean ground beef | |
2 cans fat free refried beans | |
1 small can Ortega chili peppers, drained | |
2 cups shredded low fat cheddar cheese | |
2 cups tomatoes, chopped | |
4 cups shredded lettuce | |
8 flour tortillas | May use whole grain |

1 | Prepare flour tortillas by frying them in hot oil until crisp tender, turning once. | |
2 | Drain on a paper towel. | |
3 | In a large sauce pan, brown ground beef. Drain fat. | Cook until internal temperature reaches 165 F degrees for 15 seconds |
4 | Mix canned refried beans with Ortega chili peppers, heat through. | |
5 | Place bean mixture on prepared tortillas. | |
6 | Top each with meat and then cheese. | |
7 | Top with chopped lettuce and tomatoes. | |
8 | Sprinkle with taco sauce. |
