Basic Pie Dough

| 2 cups all-purpose flour | |
| 1 teaspoon salt | |
| 2/3 cup shortening or butter | |
| 2 Tablespoons chilled margarine or butter | |
| 4 Tablespoons water |

| 1 | Sift together flour and salt. | |
| 2 | Measure and combine shortening and margarine. | |
| 3 | Cut half of the shortening into the flour mixture with a pastry blender, or work it in lightly with tips of your finger until it has the grain of cornmeal. | |
| 4 | Cut the remaining half coarsely into the dough until it is pea size. | |
| 5 | Sprinkle the dough with water. | |
| 6 | Blend the water lightly into the dough. | |
| 7 | You may lift the ingredients with a fork, allowing the moisture to spread. | |
| 8 | If you need to hold the ingredients together, add 1 to teaspoon to 1 tablespoon water. | |
| 9 | Makes two nine inch pie crusts. | Keep dough refrigerated until ready for use. |
