Chicken with Mushrooms
Portion Size: 3 oz. chicken and 2 T. mushroom sauce

2 ½ lbs. boneless skinless chicken breast or thighs | |
2 tablespoons cooking oil | |
2 cups fresh mushrooms | Washed, trimmed and diced. |
1 large bunch of green onions | Washed, trimmed and sliced thin . Including green tops |
¼ cup water | |
¼ cup low sodium soy sauce | |
1 teaspoon garlic powder |

1 | Spray a large skillet with nonstick spray. Heat oil in skillet. | |
2 | Add chicken and cook over medium heat for 2 to 3 minutes or until tender and no pink remains. Transfer to a platter; keep warm. | Cook until internal temperature of chicken reaches 165 degrees F. |
3 | In the large skillet add mushrooms, green onion, water, soy sauce, and garlic. Cook over medium heat until mushrooms are tender and most of the liquid has evaporated. Spoon sauce over chicken. |
