Garden Chicken and Pasta Salad

Portion Size: 1 ½ cups; ½ cup chicken and dressing mixture, ½ cup pasta, ½ cup vegetable 

Ingredients: Yields: 8 servings

Ingredients Notes: 
16 oz. package of dried rotini pastaMay use whole grain
2 lbs. chicken. Chopped and cooked. Cook until internal temperature reaches 165°F. 
3 cups broccoliWashed, trimmed and chopped.
1 red onionWashed, peeled and sliced.
1 ½ cups light ranch dressingMay use recipe in cookbook for dressing.
1 red bell pepperWashed, trimmed and sliced.
1 green bell pepperWashed, trimmed and chopped.
Lettuce leavesWashed and trimmed

1Cook pasta according to package directions. Drain pasta.  Rinse with cold water and drain again.
2Cook broccoli in small amount of water in microwave.  Drain.
3In a large mixing bowl combine pasta, broccoli, chicken, green pepper, and red onions.   Toss with dressing until well coated.
4Cover and chill for 4 hours.
5To serve, arrange the lettuce on salad plates.  Stir the pasta mixture and divide mixture among plates. Garnish with red peppers.
