Honey Dijon Garlic Chicken Breasts
Portion Size: 3 oz. boneless, 5 oz. with bone

| 8 boneless skinless chicken breasts (3 ½ oz. each) | Trim all visible fat. |
| ½ teaspoon black pepper | |
| ¼ cup oil | |
| 1 teaspoon salt | |
| 6 cloves garlic | Washed, peeled and minced |
| 1/3 cup Dijon Mustard, whole grain | |
| 1/4 cup Honey |

| 1 | Season chicken with salt and pepper. | |
| 2 | In a large nonstick skillet, heat oil over medium high heat. Brown chicken each side. | |
| 3 | In a small bowl combine garlic, honey and mustard. | |
| 4 | Pour sauce over chicken. Toss to coat. | |
| 5 | Reduce heat to low, cover and cook 5-6 minutes. Baste with sauce and serve. To ensure doneness check with meat thermometer. | Cook to 165°F for 15 seconds. |
