Italian Chicken
Portion Size: 4 oz. chicken and cheese, 2 T. sauce

8 (3oz.) boneless skinless chicken breasts | |
1/2 teaspoon oil | |
1 tablespoon Italian seasoning | |
1 large jar of thick spaghetti sauce | |
8 slices low fat mozzarella cheese |

1 | Heat oil in a skillet and brown the chicken on both sides. | |
2 | Pour the spaghetti sauce over the chicken and add Italian seasoning. Reduce the heat to low and simmer for one hour. | Cook until internal temperature reaches 165°F. |
3 | Just before serving, put a slice of mozzarella cheese on each piece of chicken. Allow it to melt. Spoon sauce on top of cheese. |
