Pepper Lime Chicken
Portion Size: 5 oz. chicken with bone, 3 oz. chicken boneless

| 2 ½ lbs. boneless skinless chicken pieces | |
| 1 teaspoon lime zest | Finely shredded. |
| 1/2 cup lime juice | |
| 1 tablespoon oil | |
| 1 teaspoon garlic powder | |
| 2 teaspoons ground black pepper | |
| 2 teaspoons dried thyme or basil | |
| 1/2 teaspoon salt |

| 1 | Place chicken pieces, skin side down, on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat about 20 minutes or till lightly browned. | |
| 2 | Meanwhile, for lime glaze, in a bowl stir together lime peel, lime juice, oil, garlic, black pepper, thyme or basil, and salt. Brush chicken with lime glaze. | |
