Chicken Salad with Grapes

Portion Size: ½ cup 

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 pound cooked chicken breast, cubedTrim all visible fat and skin
2 cup seedless grapes, halvedWash and trim. 
½ cup red onion, dicedWash, peel and minced
¼ cup  celery, dicedWash, trim and minced
½ teaspoon dried basil
1/4 cup blanched slivered almondsUnsalted 
1 cup light mayonnaise
8 green lettuce leavesWash and trim

1In a large bowl, combine the chicken, grapes, red onion, celery, basil, almonds and mayonnaise.
2Mix well; chill and serve on lettuce leaves.Chilled internal temperature maintained at 41°F.
