Lemon Bars

Portion Size: 2” x 2” square

Ingredients: Yields: 8 servings

Ingredients Notes: 
⅓ cup margarine, softened
1 cup granulated sugar
1 cup plus 2 tablespoons all-purpose flour Divided
2 eggs
2 teaspoons zest lemon peelWash, and zest
3 tablespoons lemon juice
¼ teaspoon baking powder
Powdered sugar for dusting
For gluten free (GF): Use GF all-purpose flour and GF baking powder. Always check each ingredient to be sure it is gluten free.

1Beat margarine with an electric mixer on medium to high speed for 30 seconds.
2Add ¼ cup of the sugar and beat till combined. Beat in the 1 cup flour till crumbly.  
3Press into bottom of an ungreased 8X8X2 inch baking pan.
4Bake in a 350°F oven for 15 to 18 minutes or just till golden.
5Meanwhile, combine eggs, the remaining sugar, the 2 tablespoons flour, lemon peel, juice, and baking powder.
6Beat for 2 minutes or till thoroughly combine.  Pour over hot baked layer.  
7Bake in a 350°F oven about 20 minutes more or till lightly browned, around the edges and center is set.Cook until internal temperature reaches 165°F for 15 seconds.
8Let cool. Dust with small amount of powdered sugar.
