Poached Apples

8 medium apples | Washed, peeled, halved, and cored |

1 | In a large skillet bring sugar, orange juice, vanilla, and 1 Cup water to boiling. | |
2 | Add apples. | |
3 | Reduce heat. | |
4 | Simmer for 10 to 15 minutes or till tender. | Cook until internal temperature reaches 165°F for 15 seconds. |
5 | Sprinkle with cinnamon. Serve warm or chilled. |
