Ham and Bean Skillet

| 2 pounds ham, cut into ½ inch cubes | |
| 2 teaspoons vegetable oil | |
| 4 medium carrots | Washed, peeled and diced. |
| 1 large onion, diced | |
| 2 (15 oz.) Great Northern beans | May use no added salt, rinsed and drained |
| 1 cup reduced sodium chicken broth | |
| 2 teaspoon thyme, crushed | |
| 1 teaspoon dried oregano, crushed | |
| 2 tablespoons dried parsley |

| 1 | In a large nonstick skillet over medium heat; sauté carrot and onion until onion is soft, about 5 minutes. | |
