Ham and Fettuccine

Portion Size: 1  cup 

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 (16 oz.) package fettuccineMay use whole grain pasta
2 pounds cooked ham, diced  Trim all visible fat
¼ cup oil
¼ cup all-purpose flour
2 cups fat free evaporated milk
1 cup low salt chicken broth
1 cup Parmesan cheese, grated
1 cup low fat provolone cheese, shredded
¼ teaspoon pepper
2 cups frozen peas
For gluten free (GF): Use GF all-purpose flour, GF chicken broth and GF fettuccine.  Always check each ingredient to be sure it is gluten free.

1Prepare pasta according to package directions. Set aside.
2Melt margarine in medium sauce pan. Stir in flour.
3Gradually add evaporated milk and chicken broth.
4Cook stirring constantly, until mixture comes to a boil and thickens.
5Stir in Parmesan cheese, provolone cheese, ham, peas, and pepper.
6Cook until cheese has melted and heated through.Cook until internal temperature reaches 165°F for 15 seconds.
7Toss the sauce with the pasta.
