Ham and Pasta Salad
Portion Size: 1 ½ cups (approx. 3 oz. meat, ½ c. pasta and ½ c. vegetables)
Ingredients: Yields: 8 servings

| 1 (16 oz.) package dried pasta | May use whole grain pasta |
| 2 pounds cooked lean ham, diced | Trim all visible fat |
| 2 cups peas | |
| 2 cups carrots, diced | Wash, peel and dice |
| 8 green onions, sliced | Wash and trim |
| 1 cup low fat plain yogurt | |
| ½ cup low fat creamy cucumber dressing | or Ranch dressing |
| 1 teaspoon dill | |
| 4 medium tomatoes | Washed, trimmed, and sliced |
| 1 red, green or yellow pepper, (optional) | Washed, trimmed and diced |
| Lettuce leaves | Wash and trim |

| 1 | Cook pasta according to package directions. | |
| 2 | Drain pasta. Rinse with cold water and drain again. | |
| 3 | In small mixing bowl stir together yogurt, dressing and dill. | |
| 4 | Pour yogurt mixture over pasta and vegetable mixture. Toss until well coated. | |
| 5 | In a large mixing bowl combine pasta, peas and carrots, ham, yogurt, dressing, dill and green onions. | |
| 6 | Cover and chill for at least 1 hour. | |
| 7 | To serve, arrange the tomato slices, lettuce lined salad plates | |
| 8 | Stir the pasta mixture and divide mixture among plates | |
| 9 | Garnish with green peppers. Serve cold. |
