Ham Salad
Portion Size: 1/3 cup Ham Salad on lettuce leaf
Ingredients: Yields: 8 servings

| 4 cups cooked ham, julienne strips or diced | |
| 1 cups celery, diced or julienne strips | Wash, trim and diced or julienne strips |
| 4 Small sweet pickles | Chopped |
| 4 Hard cooked eggs | Quartered |
| 2 tablespoons prepared mustard | |
| 2 teaspoons pickle juice | |
| 2/3 cup light mayonnaise | |
| 8 Lettuce Greens leaves (garnish-optional) | Wash, trim and divide onto plates |
