Angel Hair Pasta with Fresh Vegetables

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 pound package of angel hair pasta May use whole grain.
2 tablespoons oil
1 large zucchini Washed, halved and sliced
1 large yellow squashWashed, halved and sliced 
1 teaspoon garlic powder
1 tablespoon basil 
½ cup reduced fat parmesan cheeseShredded
2 large tomatoes Washed, trimmed and chopped

1Cook pasta according to directions on package. Cook until internal temperature reaches 135°F.
2Drain. 
3In a large pan, heat oil until hot. 
4Add zucchini, squash and garlic. 
5Cook until slightly tender, about 3 minutes. 
6Add tomatoes and basil; mix well. 
7Cook for 5 minutes. 
8Toss vegetables with pasta. 
9Serve hot. 
10Garnish with parmesan cheese.
