Cornmeal Dumplings

1 teaspoon double acting baking powder | |
2 eggs | |
¼ cup non fat milk | |
¼ cup parsley | Washed and finely chopped. (Optional) |
1 tablespoon sugar | |
1 teaspoon salt | |
2 to 3 cups stock |

1 | Beat eggs in medium bowl. | |
2 | Add baking powder, milk, sugar, salt, cornmeal and flour. | |
3 | Stir until moistened. | |
4 | Bring stock to boil in medium saucepan. | |
5 | Drop dumplings by tablespoons in boiling water. | |
6 | Cook until dumplings rise to the top (about 10 minutes). | |
7 | Remove dumplings with a slotted spoon. Serve hot. | Internal temperature 165 F. |
