French Onion Soup
Portion Size: 1 cup

| 2 tablespoons oil | |
| 2 cups onions | Wash, peel and slice |
| ½ teaspoon dried thyme | |
| 8 cups reduced sodium beef broth | |
| 8 slices French bread | |
| 8 slices Provolone cheese | |
| 1 cup low fat Swiss Cheese | Shredded |
| ¼ cup grated Parmesan cheese |

| 1 | In a large stock pot heat oil to medium high heat | |
| 2 | Add onions. Cook until tender. | |
| 3 | Add beef broth, thyme and bring to boil. Reduce heat. Simmer about 20 minutes. Heat the oven broiler | |
| 4 | Ladle soup into oven safe serving bowls and place one slice bread on top of each. Layer each bread slice with slice of provolone, ¼ cup Swiss cheese and Parmesan cheese. Place bowls on cookie sheet and broil in preheated oven until cheese bubbles and browns slightly |
