Baked Acorn Squash
Portion Size: ½ cup squash

2 medium acorn squash, halved and seeded | Washed, halved and seeded. |
1 tablespoon olive or canola oil | |
2 tablespoons brown sugar |

1 | Preheat oven to 350 °F. | |
2 | Turn acorn squash upside down onto a cookie sheet. | |
3 | Bake in a 350°F oven until it begins to soften, approximately 30 to 45 minutes. | |
4 | Remove squash from the oven and turn onto a plate so that the flesh is facing upwards. | |
5 | Place oil and brown sugar into the squash, and place remaining squash over the other piece. | |
6 | Place squash in a baking dish so the squash won’t slide around too much while baking. | |
7 | Place squash in the 350°F oven and bake another 30 minutes. | Cook until internal temperature reaches 135°F. |
Variations: Acorn Squash can be steamed, braised, microwaved, roasted, stir fry. May add choice of herbs or spices for flavor.
