Mango Raison Chutney

| 1 teaspoons garlic powder | |
| 2 cups diced, frozen or fresh mango | Wash, peel and dice |
| 1/2 cup raisins | |
| 1 teaspoon ground cinnamon | |
| 1/4 teaspoon ground ginger | |
| 1 cup water | |
| 3/4 cup brown sugar | |
| 1/2 cup white vinegar |

| 1 | In a medium bowl, mix together the mango, garlic, raisins, cinnamon, and ginger. | |
| 2 | In a medium saucepan, boil water and brown sugar, stirring constantly, until sugar is dissolved. | |
| 3 | Add the dried fruit mixture and vinegar. | |
| 4 | Bring to a boil, reduce heat, and simmer for 10 minutes. | |
| 5 | Remove from heat, and allow to cool for 5 minutes. | |
| 6 | Serve immediately, or refrigerate in a covered container. Serve hot or cold. |
