Swiss Chard Sauté
Portion Size: ½ cup kale

| 1½ pounds Swiss Chard, | Washed, remove hard stems and leaves chopped |
| 1 tablespoon olive oil | |
| 3 cloves garlic | Washed, peeled and minced |
| ½ cup low sodium vegetable stock or water | |
| salt and pepper | |
| 2 tablespoons red wine vinegar |

| 1 | Heat olive oil in a large skillet over medium high heat. | |
| 2 | Add the garlic and cook until soft. | |
| 3 | Raise heat to high add the stock or water and kale. | |
| 4 | Toss to combine. | |
| 5 | Cover and cook for 5 minutes. | |
| 6 | Remove cover and continue to cook, stirring until all the liquid has evaporated. | Cook until internal temperature reaches 135°F. |
| 7 | Season with salt and pepper. Add the vinegar. |
Variation: Swiss Chard can be steamed, braised, microwaved, roasted, stir fry. May add choice of herbs or spices for flavor.
