Peach and Ginger Sauce
Portion Size: 2 Tablespoons

| 2 cups canned diced peaches (undrained) | Use juice or water packed |
| 1 tablespoon olive oil | Wash |
| 1 tablespoon shallots (finely minced) | Washed, peeled and minced |
| 1 teaspoon ground ginger | |
| 1 clove garlic | Washed, peeled and minced |
| ¼ cup dark brown sugar | |
| 1/2 teaspoon ground cinnamon | |
| 1/2 teaspoon mustard powder (yellow) | |
| 1/4 teaspoon salt | |
| 2 Tablespoons cornstarch |

| 1 | In a small pan, heat oil to medium high heat. | |
| 2 | Add shallots and garlic. Sauté until tender. | |
| 3 | Add peaches, ginger, brown sugar, cinnamon, mustard, cornstarch and salt. | |

| 5 | Reduce heat and simmer for 10 minutes, stirring occasionally | |
