Celery and Pear Salad

Portion Size: 1/2 cup

2 cups celeryWashed, trimmed, and cut in half crosswise
2 tablespoons cider vinegar
¼ cup light mayonnaise
2 tablespoons honey
1/4 teaspoon salt
4  ripe pearsWashed, cored and diced (leave the peel on)
1 cup shredded low fat Cheddar cheese
1/2 cup chopped pecansToasted
¼ teaspoon ground pepper
8 large leaves lettuceWash (garnish) optional

1Whisk vinegar, honey and salt in a large bowl until blended. 
2Add pears; gently stir to coat.
3Add the celery, mayonnaise, cheese and pecans; stir to combine. Season with pepper. Chill until ready to serve.
4Divide the lettuce leaves among 8 plates and top with a portion of salad. Serve chilled.
