Jicama Slaw

1-2 large jicama (8 cups) | Peeled, trimmed and julienne |
1/4 cup fresh cilantro leaves | Washed and minced |
1 large lime | Juiced (add zest of lime too for more flavor) |
1 lemon | Juiced (add zest of lemon too for more flavor) |
1 (11 ounce) can mandarin orange segments | Drained, liquid reserved |
salt to taste |

1 | Combine the jicama, cilantro, lime juice, lemon juice, and mandarin orange segments with a small amount of the syrup from the can in a bowl; mix to evenly coat. | |
