Tomato and Cucumber Salad

| 4 cups chopped cucumber | Washed, trimmed, seeds removed and chopped |
| 1/4 teaspoon salt | |

| 1 teaspoon lemon peel, zest | Wash and zest peel |
| 1 teaspoon sugar | |
| 3 Tablespoon balsamic vinegar | |
| 2 Tablespoon olive oil |
