Tomato and Cucumber Salad

Portion Size: 1/2 cup

Ingredients Notes: 
4 cups tomatoWashed, trimmed and diced
4 cups chopped cucumberWashed, trimmed, seeds removed and chopped
1/4 teaspoon salt
3 teaspoons basil leavesWashed, trimmed and finely chopped
1 teaspoon lemon peel, zestWash and zest peel
1 teaspoon sugar
3 Tablespoon balsamic vinegar
2 Tablespoon olive oil

1In a large bowl combine salt, basil, lemon peel, sugar, balsamic vinegar and olive oil.
2Add tomatoes and cucumbers.  
3Toss and chill until ready to serve.
