Sweet Potatoes Casserole

5 large sweet potatoes | Washed, peeled and sliced (about 4 pounds) |
½ cup packed brown sugar | |
3 tablespoons orange juice | |
1 pinch ground cinnamon |

1 | Preheat oven to 350 degrees. | |
2 | Place sweet potatoes in a large saucepan with enough water to cover. | |
3 | Bring to a boil and cook until tender, about 15 minutes. | |
4 | Remove from heat and drain. | |
5 | Whip sweet potatoes in a large bowl with electric mixer. | |
6 | Add the brown sugar, orange juice and cinnamon. | |
7 | Pour into baking dish. | |
8 | Bake uncovered for 25 to 30 minutes. | Internal temperature 135 F. |
