Spicy Turkey Tortilla Wraps
Portion Size: 1 whole wrap (Approx. 2 oz. turkey, 2 T. cream cheese/sour cream mixture, 1 T. tomatoes, 1 T. red onion and 2 T. spinach leaves)

| 8 burrito sized flour tortillas | May use whole grain |
| 1 pound cooked and diced lean turkey | |
| 2/3 light mayonnaise | |
| 1 (10 oz.) can diced tomato with green chili peppers | |
| ¼ cup onion | Wash, peel and finely chopped |
| ½ teaspoon chili powder | |
| Dash cayenne pepper | |
| 1 cup low fat shredded Mexican cheese blend | |
| 2 cups fresh spinach leaves | Washed, trimmed and chopped |

| 1 | Heat each tortilla in a large skillet. | |
| 2 | Combine mayonnaise, tomatoes, onions, chili powder and onion in a small bowl. | |
| 3 | Spread each tortilla with mixture | |
| 4 | Arrange turkey and cheese on each tortilla | |
| 5 | Top with spinach leaves | |
| 6 | Roll up tight and cover each with plastic wrap. Refrigerate for 1 hour before serving. Slice at diagonal angle and serve |
