Lemon Garlic Pork Tenderloin

| 3 ½ -4 lbs. boneless pork tenderloin | Trim all visible fat. |
| ½ cup olive oil | Or vegetable oil |
| 3 tablespoons lemon juice | |
| 2 tablespoons grated lemon peel | |
| 6 garlic cloves, mince | Wash, peel and mince |
| 2 tablespoons dried oregano | |
| 1 teaspoon salt | |
| 1 teaspoon pepper |

| 1 | In a re sealable container, combine, oil, lemon juice, lemon peel, oregano, salt and pepper. Add Pork and Marinade for 1- 8 hours | |
| 2 | Heat oven to 450°F | |
| 3 | Remove pork from marinade. Spray with a baking stick nonstick cooking spray and add pork. | Discard marinate |
| 4 | Do not cover and do not add liquid. | |
| 5 | Add roast to oven and immediately reduce heat to 325°F. Roast 25 to 35 minutes to the pound. | A rolled roast or boned roast requires 5 to 10 minutes longer to the pound Slice thinly across the grain and serve. Heat to at least 145 degree with 4 minute rest |
